The Harvest Apple Salad from Inspired Go
Fall called, and we made it a salad!
The Harvest Apple Salad is everything we want this time of year: crisp, colourful, a little cozy, and full of the flavours that make fall so good. It starts with peppery arugula and crunchy green apple, then brings in fresh celery and radish for even more texture. Roasted butternut squash adds a touch of warmth and sweetness, creamy goat cheese softens everything out, and toasted walnuts bring that rich, nutty crunch that makes every bite feel a little more satisfying.
Then comes the Apple Cider Dijon Vinaigrette. Bright, tangy and savoury with just the right amount of sweetness, it pulls all of those fresh and roasted flavours together without overpowering them.
The result is a salad that feels seasonal without feeling heavy, fresh enough to keep things light, but full of enough texture and flavour to feel like a proper fall meal. It's fresh enough for lunch and cozy enough for fall!
Let’s Talk About the Crunch
There is a lot happening in this salad, but texture might be one of its best features.
Green apple gives you that unmistakable crisp bite, while sliced celery brings a lighter, refreshing crunch. Radish adds another layer with its clean, slightly peppery flavour, and toasted walnuts bring a deeper, nuttier crunch into the mix.
Instead of every bite feeling the same, there is always something different going on. You might get sweet apple and tangy goat cheese in one forkful, then roasted squash and toasted walnuts in the next. The arugula keeps everything leafy and fresh while all of those different textures make the salad feel substantial. It is crunchy, creamy, crisp and tender all at once. In other words, it's a salad with serious fall energy!
The Ingredients That Make It Feel Like Fall
A few ingredients can instantly make a recipe feel seasonal, and roasted butternut squash is definitely one of them. Its natural sweetness brings that unmistakable fall feeling to the bowl, especially when paired with the tart, crisp bite of green apple. Creamy goat cheese adds a rich, savoury contrast, while toasted walnuts bring warmth, nuttiness and plenty of crunch. Together, they create that cozy autumn flavour we are craving this time of year, without taking away from the freshness that makes this salad so easy to come back to.
And then there are the colours. Bright green apple and celery, deep green leafy arugula, creamy white goat cheese, vibrant radish and vivid orange squash make every bite look just as inviting as it tastes. There is something about that mix of fresh greens and warm harvest colours that makes the whole salad feel unmistakably seasonal before you even take your first bite.
What we love most, though, is that it still feels light and lively. The crisp apple, celery and radish keep things fresh, while the squash, walnuts and goat cheese add just enough richness to make it feel satisfying. It gives you all those familiar fall flavours without turning into something heavy.
Fresh, colourful, crunchy and full of autumn flavour, it is proof that this season never tasted so fresh!
Apple Cider Dijon Vinaigrette Brings It Together
With this many contrasting ingredients, the dressing has an important job. Our Apple Cider Dijon Vinaigrette brings brightness and tang to the salad while complementing the sweet apple and roasted squash. Dijon adds a savoury note that keeps the recipe balanced, while the apple cider flavour feels right at home with the ingredients already in the bowl.
Once everything is tossed together, the dressing works its way into the arugula, coats the roasted squash and celery, and catches on all those crumbles of goat cheese and toasted walnut pieces. That is when the recipe really comes together! The sweetness feels brighter. The goat cheese tastes creamier. The pepperiness of the arugula softens just enough. And suddenly every ingredient feels like it belongs in the same forkful.
Sweet, savoury, tangy and fresh, all in one bowl!
Meet Your New Fall Fixation
The Harvest Apple Salad is filling enough to stand on its own, but if you are looking to make it even more substantial, add chicken!
Chicken works especially well here because its savoury flavour complements the Apple Cider Dijon Vinaigrette without competing with the apple, goat cheese or roasted squash. It adds extra heartiness while still letting all of those fall flavours stay front and centre.
It makes this an easy option for busy lunches, weeknight dinners or those days when you want something that feels seasonal without feeling heavy.
And that might be our favourite thing about this salad. It captures the ingredients we love during the fall season: toasted walnuts, roasted squash, crisp apples and cozy flavours. Then brings it all back to something fresh, colourful and easy to enjoy!
